Lentil Sausage and Kale Soup

Amy Roloff’s Little Kitchen
Ingredients:
2 cups of Lentils
1 large onion, chopped
3 large carrots, chopped
3 stalks of celery, chopped
3 Tbsp of Olive Oil
1 ½ pounds of bulk Italian sausage, or
1 pound of Kielbasa, cut in thick slices or
Italian sausage, casting removed and sliced
Salt and Ground Pepper
3 large cloves of garlic, minced
2 Bay leafs
1 ½ Tbsp Thyme
1 tsp cumin
1 tsp rosemary
8 cups of good Chicken Broth
2 Tbsp tomato paste
4 cups of Kale, without stems
½ cup chopped Parsley
Shaved Parmesan Cheese
Optional: ¼ cup Red Wine or 2 Tbsp Red Wine Vinegar
Directions:
In a medium size bowl add lentils and 2 cups of boiling water. Let sit for about 20 minutes and drain any water that is left over. Note: I like this step because it begins to get the lentils ready and softens them up just a tad before adding to the soup.
Tear Kale from their stem and into bite size pieces. Place in a bowl and drizzle with olive oil and sprinkle salt and gently mix kale.
If not done already, chopped the vegetables. In large medium stock pot heat up 1 tbsp of olive oil and sauté onions, carrots and celery, salt and ground pepper for
about 10 minutes til just tender. Add in 1 Tbsp Olive Oil (if needed), sausage, breaking up into bite size pieces, garlic and seasonings – thyme, rosemary, bay leaf, cumin and cook for another 10 minutes or longer til sausage is cooked through.
Add the Chicken broth, tomato paste and the drained lentils. Bring to a boil and then reduce the heat to a simmer cook for about 1 hour til lentils are cooked through and tender. Add kale and cook for another 10 minutes or so.
Add salt and ground pepper or other seasonings if needed.
Serve in bowls sprinkled with parsley and shaved Parmesan cheese.
Enjoy gathering around the table.
In the video I thought I heard Amy say she added paprika. I don’t see it listed in the recipe. ??
Tried it tonight with spinach as I am not a fan of kale. It was hearty and wonderful.

My Mother was in an abusive relationship and abandoned by her husband for another women at the age of 17. She had to move in with her Mother and Father as back then there was no support for women. I was born when Mom was 18. Mom worked and Grandma raised me. I am from a family of very strong women and we can get through anything put in our path. I also was raised by Christian women with strong faith and believe in the power of prayer. I do not connect with many reality shows on TV, however I recognized you have the strong women qualities and Christian values. Divorce is a must sometimes but it is not an easy road to travel.
My Husband and I are married 53 years and now retired. We have twin boys (50).
We are very proud of them – Andrew is a High School Teacher and Anthony is a City Planner at Toronto City Hall.
This is the first time that I have left a message to anyone. Here is some of my story. I guess it has something to do with me turning 75years of age. It has taken many years for me to allow some of my life story to be put out there. When I turned 50, I asked my Husband to take me to see my Father’s resting place which is a few miles away. My Father died at the age of 39 with a massive heart attach. This was a very bad mistake. The grave was hardly marked and not attended. I had forgiven him many years before and it makes me sad that no one seemed to care. I will not return. At 60, I went to the University of Toronto Archives to read their divorce. I would not have done this if my Mother was still alive. She died at 68. I think I have gotten all the puzzle pieces together.
I explain to our children that knowing where you originated – your relatives – your heritage means a great deal.
Oh heavens, the flood gates are open and I have so much to say, however it is time to end.
