Amy's Extra Dark Fudge

Dark Chocolate Cherry Cordial Fudge

Ingredients:

  • 1 ½ cups sugar
  • 7 oz Marshmallow Crème
  • 5 oz Evaporated Milk – small can
  • 4 Tbls Butter
  • 12 oz Extra Dark Chocolate Chips (I use Guittard brand)
  • ½ tsp Vanilla Extract
  • 1 Cup Dried Tart Cherries
  • ½ Cups White Chocolate Chips, add a few drops or more of juice from Maraschino
  • Cherry juice (for drizzle)

Directions:

  1. Line an 8x8 or 9x9 pan with foil and butter bottom and sides of pan
  2. Combine Sugar, Evaporated Milk, and Butter in a heavy saucepan. Bring to a light boil, add marshmallow crème and continue to cook til marshmallow has melted.
  3. Cook over medium heat and continue to keep stirring constantly for about 5 minutes more
  4. Remove from heat, stir in chocolate chips and vanilla and stir til smooth
  5. Once chocolate chips have all melted and is smooth, fold in dried cherries, stir til evenly dispersed. Pour Fudge mixture into foil butter lined pan.
  6. Set aside til firm – for at least a couple of hours but best to sit over night. Putting fudge in the refrigerator will help it set faster but not necessary.
  7. Melt White Chocolate Chips and add a few drops of juice from maraschino cherries and mix
  8. Drizzle ‘red’ White Chocolate sauce over fudge.
  9. Let drizzle set before removing fudge from foil lined pan.
  10. Cut fudge into desire size pieces and serve on platter

    Hi Amy…I’m not going to pretend to know you and your family, but I do enjoy you letting us in on your life…all of it…good, bad and yes sometimes, I’m sure the other “u” word….uncomfortable. I speak only for myself and remain to be as fair to everyone involved, as I can be, when discussing your show. I just recently read your fudge recipe and am excited to make it. I was curious as to the comments from some of your fans and I felt compelled to respond to one in particular due to the, I’m sure unintentional insensitivity of the remark. “She misses your family”…I’m convinced that it was not meant to be anything other than endearing, but I felt it wasn’t something that should not have been said. Our lives are constantly changing, our families grow, our lives take sudden turns, good and bad, and yes, we will miss a lot of what was always! Of course we all "met"you many years ago as as Amy, amazing daughter, wife, mother, grandparent, friend and now fiance! Notice the progression of change in one sentence! It happens! You’ve been through a marriage and created a beautiful successful family that “changed its course” along the way. There will always be parts of your life that are “over” and I’m sure will be missed at times, but you are now in a beautiful relationship with someone great and you are still with your family! What’s to miss? Just the familiarity of the "original " family, okay agreed, but I don’t think anyone of us should remind you of this. It’s not missed …it should be celebrated as what it was and excited for what it will become. Again, only my opinion…to each his own.
